Vegan Buttermilk

Vegan Buttermilk

What do you do when you don’t eat dairy and a recipe calls for buttermilk? You improvise, of course!

For years, when a recipe called for buttermilk, I rarely had it on hand. So I “made” it with milk and white vinegar. Some recipes for this call for lemon juice instead of the vinegar, but I rarely had that on hand either. When I finally tried it with lemon juice, I found I preferred the white vinegar version.

Here I am, years later, trying to avoid dairy when I can because of a finicky immune system, but still wanting to make the same old recipes.

I’m learning to adapt.

So I thought, why not try making my old standby buttermilk recipe… with almond milk instead?

Let me tell you… I tried it with the chocolate chip banana bread we made today, and it came out perfectly! My husband declared it the best banana bread I’ve ever made, even though the rest of the recipe is the same one I always use.

Without further ado…
