Carrot Muffins

Baking with M, Week 11

We had a few weeks away from baking while we did some traveling.

We had a very exciting trip to Park City, Utah, for a good friend’s wedding ceremony. Matt officiated (thanks to the Universal Life Church), and M was the flower girl. The weather was cold and crisp and the girls got to see a bit of snow – a first for S.

The following weekend, we took a road trip to San Antonio for Grandpa’s birthday. The weather was beautiful. The girls got some pool time, we saw the Alamo, the River Walk, and had a very delicious steak dinner.

Rounding out the three-week baking break, we had the reception for the Utah wedding here in Austin. We filled in the rest of the weekend with a few mountains of laundry, the school fall festival fundraiser, and getting our Halloween costumes together just in time for the neighborhood Trunk or Treat event with friends.

Phew!

We had some extra carrots to use, and on a quick search I found another great recipe on Pretty Simple Sweet. We made the recipe as directed, but without the nuts and coconut.

M was not very excited about using carrots, and swore she wouldn’t eat any of the muffins.

She lied.
