Apple Cider Donuts

One of the things I miss most about fall in the northeast are apple cider donuts. They’re practically a staple. In Connecticut, we would get them from Bishop Farm or Lyman Orchards, along with a hot chocolate or apple cider. Apple season seems to come much earlier in Texas, when it still feels a little too warm for fall goodies. It’s impossible to find them here.
Since we are not heading north this fall, and because I found pure apple cider at the local H-E-B, I wanted to make my own donuts this year. I was so excited to see a recipe on Pretty Simple Sweet which was EXACTLY the recipe I wanted to make!
It was serendipity.
(I’ve always wanted to use that word!)
Overall, the recipe was an easy one. The trickiest part was reducing the apple cider. I flubbed the first batch and reduced it too far. When I tried again, I poured it into a measuring cup (and back into the pan) more frequently to make sure I got just the right amount.
It’s an easy recipe to measure and mix for littles.
M also really enjoyed squeezing the batter into the donut pan.
Of course, she also loved eating them when we were done.
My husband even declared them “the best thing I’ve ever made”, and he doesn’t even like apple cider donuts, usually.
Will these be in the regular fall rotation? Absolutely!
